Or, que l&rsquo;on cultive soi-m\u00eame en potager ou que l&rsquo;on souhaite profiter des arrivages mara\u00eechers au-del\u00e0 de la saisonnalit\u00e9, se pose la question de la conservation tout au long de l&rsquo;ann\u00e9e.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">La cong\u00e9lation est certes int\u00e9ressante mais tr\u00e8s \u00e9nergivore et limit\u00e9e en termes de place.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">La r\u00e9alisation de conserves est un peu chronophage (et \u00e9nergivore en raison de la mont\u00e9e cuisson) et peut \u00eatre dangereuse si rat\u00e9e.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Et si on red\u00e9couvrait la lacto-fermentation qui existe depuis la pr\u00e9histoire, ne demande que des bocaux \u00e0 conserve, du sel, de l&rsquo;eau et c&rsquo;est tout ? M\u00eame pas de cuisson? Non, m\u00eame pas!<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Cette m\u00e9thode permet de conserver des l\u00e9gumes r\u00e2p\u00e9s (comme dans le premier lien) mais \u00e9galement des l\u00e9gumes entiers (la recette est la m\u00eame). Dans le 2\u00e8me lien, vous d\u00e9couvrirez tous les avantages de la lacto-fermentation.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Enfin, \u00e0 la question, \u00ab\u00a0peut-on cuire des l\u00e9gumes lacto-ferment\u00e9s?\u00a0\u00bb La r\u00e9ponse est oui, \u00e0 l&rsquo;instar du chou de la choucroute. Il y a donc une modification du go\u00fbt de l\u00e9gume que l&rsquo;on connait mais cela permet de varier les plaisirs gustatifs.
